Crunchy Chicken Salad;
This recipe is a full meal in itself, we all love it and so do our friends and family that visit with us.
3-tablespoon butter or margarine.
1-package (3ounces) Oriental-flavor ramen noodle soup mix
2 tablespoonn sesame seed
1/4 cup sugar
1/4 cup white sugar
1 tablespoon vegetable oil
1/2 teaspoon pepper
2-cups cut-up cooked chicken
4-medium green onions, sliced (about 1/4 cup)
1 bag (16 ounces) coleslaw mix
Melt butter in 10 inch skillet over medium heat. Stir in seasoning packet from the noodles. Break the noodles into bite size pieces, (I put them in a plastic zip bag, and use a meat tenderizer or mallet) to break the noodles.
stir the noodles into the butter mixture. Cook at low temperature for 2-3 min.stirring constantly, stir in sesame seed. Cook about two more minutes.stirring constantly till noodles are golden brown (these burn easily so keep the temperature low and watch them closely)) In large bowl mix sugar,vinegar,, oil and pepper add all remaining ingredients except noodles; toss to mix.(I like to serve the noodles in a seperate dish to be used by choice, and they stay crisper longer)
